After university, Xin Ying took a full-time marketing role at an e-commerce company.

COVID restrictions meant much of that work took place remotely.

She later described the period as increasingly routine, while the creative independence of Bread & Butter was pulling her in the opposite direction. Eventually, she left the security of her corporate role and returned to baking full time.

Bread & Butter consequently developed almost backwards compared with many professional bakeries.

First came the products.

Only afterwards came the commercial kitchen.

The Cinnamon Sticky Bun That Became the Signature

One bake became particularly important.

The Cinnamon Sticky Bun had originally been inspired by Xin Ying's boyfriend's preference for cinnamon rolls.

Xin Ying's fiancé worked in the CBD and noticed a small retail unit available for rent.

He suggested she take a look.

The unit was not particularly inviting.

She nevertheless saw an opportunity.

Offices surrounded the building, workers were gradually returning to the CBD after pandemic restrictions, and the unit gave Bread & Butter access to a completely different customer base.

She signed the lease.

Bread & Butter by XY opened there in 2022.

Learning to Run a Commercial Bakery

Moving into a physical bakery also exposed the difference between baking well and operating a professional kitchen efficiently.

Xin Ying had never worked in F&B.

Suddenly she was responsible not only for baking but also for rent, equipment, maintenance, staffing, pest control, air-conditioning problems, purchasing and production scheduling.

Early workdays could begin around 4:30am and continue well into the evening.

Commercial production also required her to rethink techniques that had worked perfectly well at home.

In one example, Xin Ying had been manually brushing melted butter onto dough. Bakery staff with more commercial experience introduced faster production methods capable of producing the same result while saving considerable time.

These are not glamorous parts of bakery ownership.

But they may be more important than developing another pastry.

Scaling a recipe is one challenge.

Scaling the way people work around it is another.

An All-Pink Bakery in the CBD

Bread & Butter also established a strong visual identity from the beginning.

Its Robinson Road store became recognisable for an all-pink interior, particularly unusual within the more restrained office environment around Robinson Road and Tanjong Pagar.
